Vegan Brownies made with Cocoa Powder
Whether you’re a fudgy or cakey brownie person this recipe will not disappoint. These brownies are delightfully cakey, slightly fudgy, and full of decadence and body; keep a glass of soy milk close by! I’m certain this will be your new go-to recipe.
Dry Ingredients
2 cups all-purpose flour
1 2/3 cup sugar
3/4 cocoa powder (sifted)
1 tbs instant coffee
1 tsp baking powder
1/2 tsp salt
Wet Ingredients
1 1/4 cup soy milk
3/4 cup oil
1 tbs vanilla
Instructions
Preheat the oven to 350°F and grease an 8x8 baking dish — place down parchment paper allowing for the sides to slightly overlap for easy removal
In large bowl combine the dry ingredients, remembering to sift the cocoa powder
In a separate bowl or measuring cup combine the wet ingredients
Add the wet ingredients into the dry bowl and mix until well combined
Pour the mixture into the lined and greased baking dish — top with 1/4 cup of roughly chopped walnuts then smooth the top down with the back of a spoon to partially cover (optional)
Bake at 350°F for 40-45mins
Cool for 10mins before removing from the baking dish and slicing
