Vegan Blackberry Streusel Muffins
“the blacker the berry the sweeter the juice.”
I decided to take some blackberries that I didn’t want to go to waste and turn them into muffins. no “speciality” vegan ingredients; just homemade muffins. if you don’t have or like blackberries then blueberries or raspberries would be perfect too.
Streusel Topping
1/3 cup white sugar
1/4 cup plain flour
2 tbs oil or melted butter
pinch of cinnamon
Dry Ingredients
1 1/2 cup flour
3/4 cup sugar
2 tbs baking powder
1 cup fresh or frozen blackberries
Wet Ingredients
3/4 non-dairy milk (I used soy)
1/2 cup oil
1 tbs apple cider vinegar or lemon juice
Instructions
Make the topping by combining all the ingredients then set it aside
Add all the dry ingredients to a bowl along with the blackberries and mix, careful not to break up the blackberries
Add all the wet ingredients to a bowl and mix separately before combining with the dry
Gently incorporate the two together, careful not to over-mix
Oil and line a muffin tray then fill the cups to a little more than halfway
Top each muffin with the streusel topping and bake at 360°F for 20-25mins
