Jamaican Green Seasoning
Green seasoning is to Caribbeans what pesto is to Italians. This green gold hails from the Caribbean; with this recipe belonging to my mom. Green seasoning is a paste made from spices, herbs, and vegetables which is then used to marinade meat or to season dishes. While every recipe varies depending on the island and personal preferences most commonly used ingredients you’ll find in a green seasoning include scallion, garlic, onion, thyme, parsley, and a hot pepper. All of the ingredients are then pulsed in a food processor until smooth (or chunky depending on preference).
Ingredients
1 bundle of parsley
1 bundle of cilantro
1 bundle of fresh thyme
1 bundle of basil
1 bundle of scallion (about 6-8 stalks)
a knob of ginger
1 scotch bonnet
1 large onion
1 bulb of garlic (about 10-12 cloves)
½ tsp of salt
3 tbsp of extra virgin olive oil
Instructions
Thoroughly wash the fresh herbs. No need to pat dry as the residual water will help lubricate the food processor blades.
Add all the ingredients to a food processor. Blend to desired texture.
Store in airtight jar, adding enough extra virgin olive oil to cover the top in order to help preserve. Store in the fridge.
