Chick'n & Waffles
There is no denying that this pairing was made for one another. Fluffy, soft, slightly crisp waffles accompanied by crispy, juicy, crunchy fried chicken with a sweet drizzling of maple syrup. With this recipe the easy part will be eating them, the hard part will be deciding whether you want them for brunch, lunch, or even dinner.
Waffles
1 cup all-purpose flour
1 tbs sugar
1/2 tsp salt
2 tsp baking powder
1 cup non-dairy milk
1 tbs vinegar (apple cider works best)
1 tsp vanilla
Dredge
1 package of Nelakee drumsticks
1 cup all-purpose flour
2 tsp old bay
2 tsp slap ya mama cajun seasoning
1 tsp sage
1 tsp black pepper
1/2 tsp salt
1/2 tsp baking powder
1/2 a sachet of Shake & Bake (optional)
Marinade
1 cup of non-dairy milk
1/2 cup of Frank’s Red Hot
Instructions
Allow your chick’n to sit in the marinade while you prepare your flour dredge and your waffle batter.
Combine the ingredients for the flour dredge in a Ziploc bag. Shake to combine and set aside.
In a medium bowl combine the dry ingredients for the waffles (flour, sugar, salt, and baking powder). Stir to combine.
Measure 1 cup of non-dairy milk and add 1 tbs of vinegar along with 1 tsp of vanilla. Stir to combine and then pour this into the dry ingredients.
Mix the batter until smooth and then allow it to sit for 5 minutes.
While the waffle batter is resting remove the chicken from the marinade and drop the pieces into the Ziploc bag with the flour dredge and shake to coat the chick’n.
Remove the pieces of chick’n from the Ziploc bag and drop them back into the marinade repeating this process once more. Rest the pieces of chick’n on a clean plate once done.
Fry in a pan with oil filling less than halfway at medium-high heat. Check each side after 3-4mins and fry until golden. Rest the fried chick’n on a plate lined with paper towels.
Lightly grease a hot waffle iron with vegan butter or oil and fill it with the waffle batter that you allowed to sit. Cook according to your waffle iron instructions or until the waffle is fluffy and lightly brown.
Plate your chick’n and waffles and serve with a drizzling of syrup and hot sauce. Enjoy.

I usually buy the Nekalee drumsticks from my local asian market; Ocean’s (I live in Ontario) — they are priced at $9 and 7-8 wings come in the package.
Nekalee has a website of their own where you can shop their products and have them delivered.
If you are unable to find the Nekalee drumsticks or you don’t want to spend the$9 then the perfect substitute would be my Tofu Fried Chicken.
